'She brightened every room she entered': Business started in memory of sister

A MAN has created a food truck business in memory of his sister who died earlier this year.

Fin McCarthy started a business in memory of his sister, 26-year-old Tia-Mae McCarthy, following her death on April 28.

After finding and buying a truck online, Fin decided to take a leap and start his own business, T's Tapas, inspired by Tia's love for tapas.

He added that the business solely provides gluten-free food, creating a safe place for coeliacs and people with gluten intolerances.

Fin said: "Tia used to loved tapas, I have always been passionate about tapas and I wanted to go out and do my own thing."

He explained that throughout her life, Tia faced many medical challenges that affected her eating and relationship with food.

After years of being fed through tubes and attending specialised clinics, one day she began eating again, with Fin describing it as a 'miracle'.

He has been working as a chef for the last seven years, starting as a kitchen porter and working his way up.

Taking inspiration from his sister, one of the specials is a chorizo dish with honey and red wine, which Fin says was one of her favourites.

Other menu items include patatas bravas, two versions of loaded patatas bravas, salt baked potatoes, meatballs, prawns and even cheesy patatas bravas.

When talking about his favourite memories with Tia, Fin said that Christmas was always a special time for the family, adding that due to Tia having a young mental age, she used to believe that Santa was still real.

The business started in September this year and since this time, Fin has been attending markets and booking in for private hire events.

Following her death, he set up a GoFundMe to help support the family with funeral costs, adding that they wanted to honour Tia with the send-off she deserves.

He said: "Tia faced many medical challenges throughout her short life, but she never let them dim her spirit or sense of humour.

"She battled through everything life threw at her and she always had a smile on her face.

"She brightened every room she entered and to lose her so unexpectedly has been incredibly difficult for all who loved her.

"We would like to honour Tia with the send-off she truly deserves, one to reflect the joy she brought to us and to show our immense love for her."
