You have the US model, which supports mmWave, the mideast/Canada/Japan model which doesn't, the (most of) the rest of the world model which supports a few less bands than the mideast/Canada/Japan model, and then the China model which is very similar to the rest of the world model except it doesn't support 5G band n53 for some reason.

It might have made sense if this segmentation were tied to the SIM/eSIM/dual SIM situation, but it's clearly not seeing as there are 4 different models and the iPhone SE is also segmented in a similar manner.
