Try this Lemon Oatmeal Loaf by Mama Sita's marketing executive and weekend kitchen warrior Ces Nepomuceno-Gamad. It combines the citrusy goodness of lemon, which means fiber and Vitamin C, with the "whole"-ness of oatmeal, which is also loaded with nutrients.
"One fine day, I woke up craving a lemony loaf. I had some flour left, but not enough to make the full 2 cups most recipes call for -- so I added oatmeal as a partial substitute," Ces said.
Lemon Oatmeal Loaf
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup rolled oats
1/2 cup raw sugar
2 tsp. baking powder
Pinch of sea salt
1 1/2 pcs. lemon, zested and juiced
1/2 cup coconut oil
1/2 cup cottage cheese yogurt or Greek style yogurt or milk
3 tbsps. honey
Pecans or walnuts for topping (optional)
Procedure:
1. Preheat your oven to 180°C (350°F).
2. In a mixing bowl, combine all dry ingredients: flour, oats, sugar, baking powder, and sea salt.
3. Add lemon zest, coconut oil, yogurt (or milk), and juice from 1 whole lemon. Mix until the ingredients are well incorporated. The batter should have a pancake-like consistency -- chunky, sticky, and not too runny.
4. Line 3 mini loaf pans or 1 large loaf pan with baking paper, and lightly brush with oil.
5. Pour the batter into the pans, filling each one up to two-thirds full.
6. Top with thin slices of lemon and some walnuts or pecans as desired.
7. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
8. While the loaf is still warm, mix the juice from the remaining 1/2 pc. lemon with honey, and drizzle over the top.S
9. Serve with tea or coffee.
